3 Dinners I’m making again
I’m always looking for dinners that are easy enough for a weeknight but good enough that I actually look forward to making them again.

Bright, creamy, comforting, and somehow still light enough that it doesn’t feel too heavy.

Roasted Tomato Pasta
Roasted tomatoes, garlic, parmesan, and plenty of basil. Simple ingredients that somehow turn into exactly what I want at the end of a long day.
It’s easy, comforting, and even better with a generous handful of parmesan on top.
Best with crusty bread and absolutely no plans afterward.

Honey Dijon Salmon
A little sweet, a little tangy, and on the table before I have time to reconsider ordering takeout.
The honey-Dijon glaze does most of the work, which makes this one especially good for busy nights when I still want dinner to feel like an actual dinner.
Add roasted vegetables and dinner is done

Good food doesn’t have to be complicated.
The recipes I come back to most aren’t usually the fanciest ones. They’re the ones that make an ordinary Tuesday feel a little better—and don’t leave the entire kitchen waiting to be cleaned afterward.
Good food, good company, and something I’d happily make again. That’s really all I’m looking for.
